Preheat the oven to 200 degree cen 375 degree f or Gas Mark 5.
Sieve flour together with baking powder and soda bicarbonate thrice.
Mix and beat well the powdered sugar and oil.
Add egg yolks and beat for 2 mins.
Add all the dry ingredients.
Add vanilla essence.
Beat the egg whites lightly stiff and fold into carrot mixture.
Place in a greased tray dusted 8 cups capacity.
Bake for 1 1/2 hrs.
Remove from the oven and cool in the tin.
Turn it over to a cooling rack.
