  • 1)Preheat the oven to 200 degree cen 375 degree f or Gas Mark 5.
  • 2)Sieve flour together with baking powder and soda bicarbonate thrice.
  • 3)Mix and beat well the powdered sugar and oil.
  • 4)Add egg yolks and beat for 2 mins.
  • 5)Add all the dry ingredients.
  • 6)Pour in honey.
  • 7)Add vanilla essence.
  • 8)Beat the egg whites lightly stiff and fold into carrot mixture.
  • 9)Place in a greased tray dusted 8 cups capacity.
  • 10)Bake for 1 1/2 hrs.
  • 11)Remove from the oven and cool in the tin.
  • 12)Turn it over to a cooling rack.

    Dear shehana, very colourful,rich with iron and tasty too . Itried with carrot and dates grinding like smoothy with oil and honey because my daughter doesnot like biting carrot. It actully enriched the color of cake. just keep it for a week actually tasted like fruitcake.keep it up.
