    to make Chicken Biryani - Kozhikode Chicken Biriyani

  • 1)Mix together yogurt, coriander leaves, mint leaves, curry leaves, cumin seeds, coriander seed powder, aniseed powder, green chillies, garlic, ginger, turmeric powder, lime juice and poppy seed paste and marinate the chicken in it. Keep aside for 1/2 an hour.
  • 2)Heat clarified butter or ghee in a pan.
  • 3)Add cinnamon, bay leaf, cardamom seeds, curry leaves and cloves.
  • 4)Add onions and saute, till they turn translucent.
  • 5)Add washed and cleaned rice. Add enough salt.
  • 6)Cook, till rice turns translucent.
  • 7)Add water and allow it to boil.
  • 8)When the water comes to a boil, lower the flame and cover the pan.
  • 9)Cook on low flame for at least 15 minutes, after which the rice would be done.
  • 10)Heat clarified butter or ghee in a pan.
  • 11)Add cinnamon, bay leaf, cardamom seeds, nutmeg and cloves.
  • 12)Add onions and sautT, till brown.
  • 13)Add tomatoes and saute`.
  • 14)Add marinated chicken.
  • 15)Cover the pan and cook for at least 5 minutes on a medium flame.
  • 16)Remove the cover and cook on low flame for another 10 minutes to allow gravy to thicken.
  • 17)Layer the serving bowl with alternating layers of rice and the chicken masala.
  • 18)Garnish the top with a boiled egg cut in four pieces, roasted cashews and raisins.
  • :- Malabar Chicken Biryani is ready.
  • :- Enjoy the chicken biryani.
  • :- Serve chicken biryani with raita and papad.

    I tried this recipe ..at first I was little apprehensive but the biryani turned out really great. I made slight modifications1.I used Basmati rice2.ground all the ingredients for marinade except mint and coriander. I just added them as garnish.3.After layering I popped into the oven for few minutes.

    The recipe is good, but please update it and tell the readers that the ingredients for marinade need to be ground. I tried it without grinding & had to spend all the time removing the coriander seeds from the biryan!!!

    Thank you for the wonderful recipes on your site, can`t wait to try this one on my husband ... my mouth is watering just reading your ingredients! - a valid point about salt, even though I am a seasoned cook and passionate about South Indian food , I can never really tell where it should be added in Indian recipes, (my excuse - never learned to cook back home, lived overseas alone since I was 17, basically selftaught) I have always known perinjeerakam to be Fennel, and in my opinion absolutely essential for that wonderful distinctive taste of South India. Not sure about Aniseed myself, which can impart a very different taste.

    hi, i`m sorry to intrude into this section as non-veg is not my choice. i was just browsing thru the recipes for my sis-in-law, when i saw Dino`s question regdg aniseeds. well, if u surf the net, u`ll find that both aniseeds and star anise r two different things. Star anise is the one which has the shape of a star and is known as Takkolam in malayalam. on the other hand, aniseeds and fennel seeds r commonly known as saunf in hindi or perinjeerakam in malayalam. it seems aniseeds and fennel seeds r part of the same family and can be substituted for one other. well, not too sure on that regard. any clarifications, pls visit http://www.indianspices.com/html/s0625aniseed1.htm. hope this`ll clear ur doubts. if u think otherwise, pls respond to this. and thanxs for ur time to read this.

THIS is Not ENUF for 4 People.. i made the double of this and it was for 5 ppl and should say it was just enuf.. it also could be bcos it was very tasty, but still the amount looked very little for 8 ppl as i had doubled the quantity of all...     When I made this recipe for the first time, my husband a keralite, commented while licking his fingers "This is the kind of biriyani that we get at the resturants in kerala".     Hi, This recipe seems to be wonderful, but I dont really understand when the ingredients of biriyani masala is to be added. I read over the recipe few times and couldnt find it mentioned anywhere after the ingredients list. Can someone help me? Thanks

    priya..you are getting me wrong.i never said the dish was bad coz i have nt tried it out yet.i said it looked like a good dish&only tried to point out that salt was not mentioned in the list of ingredients.people like me who have just started cooking tend to forget things not mentioned in the recipe.you said i was silly to point out petty things.petty things?????i thought salt was the essence of any dish.

    Fantastic recipe! I definitely reccomend trying it. Also try a small variation: a little less mint and a litle more coriander rather than 50/50.

    greaaaat! i was looking for a koyikkode style BEEF biriyani. i tried ur method with beef and hurraaaaay! here`s an alternative for the rice preparation: try water: rice proportion as 1.5:1 . boil water and after light frying onion and rice in ghee, add boiling water and then whole spices. simmer and cook. thx again

    hi, this recipie is very good. but, this is not the real kozhikodan biriyani. you gotta taste it in a wedding house. both chicken and rice has later to be cooked with the chicken at the bottom and rice at the top. and fire at bottom and top, with the vessel sealed tight. like a dum biriyani.

    I did try out this recipe with mutton.The gravy of mutton was excellent.But the rice was a flop.I didnt know how the rice looks when it is translucent.hence over fried it and it remained like a stone after cooking.I guess i need some advice regarding the rice preparation.

    I wish to try this biryani, hence cannot comment now. I have 2 comments : 1) what is this broken rice. Usually we use broken rice for `kanji` (rice gruel). Or is there some other broken rice for biryani... if so what is the exact name. 2) I saw your same recipeS on www.muraleedharan.com (wondering what is happening ????) Thank you.

    It is good but I would suggest some modifications.......... After assembling all the parts of the biriyani in the serving bowl, microwave the bowl for about 10 min to allow the flavours to blend.

    This is definitely not kozhikode biriyani. Probably some version from Karnataka. Can't be compared to Kozhikode biriyani.

    this is not authentic calicut / malabar biriyani for a very simple reason that nobody puts bay leaves in malabar biriyani. and one more thing nobody can prepare the biriyani which they make during marriages because the chicken [masala] is marinated /cooked in slow flame for the whole night which makes the chicken or even beef very juicy and spicy. then the whole masala is layered inside already cooked rice for almost half day which allows the rice [always use vayanadan kaima rice, or nadan bhashayil neriyari] to absorb the aroma and flavour of chicken in each and every grain. not at all easy as it sounds.....
