  • 1)Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.
  • 2)Heat oil in a pan.
  • 3)Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.
  • 4)Sprinkle salt and sugar.
  • 5)Add grated coconut and chopped onion.
  • 6)Mix well.
