1)Wash rice and drain. cook it in water as required.
2)Heat ghee in a heavy bottomed, wide pan or kadai.
3)Fry the cashews till golden brown and keep aside.
4)Fry half of the sliced onions till brown and crisp. Keep aside.
5)Saute the remaining onions until golden brown.
6)Add cinnamon, cloves, cardamom and stir.
7)Add rice gently and mix so as to get the onions and spices coated.
8)Check salt and cook for 15 minutes.
9)Remove from fire.
10)Garnish with the crispy fried onions and cashews.
:- Serve hot with dhal curry, kurma, chicken or mutton.
