Ingredients
to make Kerala Easy Fried Rice

    Directions
    to make Kerala Easy Fried Rice
    :
  • 1)Heat 4 tbsp of butter in a pan.
  • 2)Add cinnamon and cloves.
  • 3)Add the well cleaned rice and fry it.
  • 4)Add 4 cups of water along with salt and cook it well.
  • 5)Heat 2 tsp of butter in another pan.
  • 6)Add chopped onions and stir it.
  • 7)When it becomes brown, mix the ginger and garlic paste and stir, till it`s aroma emits.
  • 8)Add chopped carrots, beans and cabbage.
  • 9)Add required salt and pepper.
  • :- Vegetables should be half cooked.
  • 10)Add capsicum and celery.
  • 11)Mix cooked rice and stir it well on a low flame.
  • 12)Mix well with soya sauce and chilly sauce.
  • 13)Garnish with fried onions, cashew nuts and raisins.
  • :- Serve hot.
  • :- Boneless cooked and minced meat(100 gm) and two scrambled eggs can make the dish non-vegetarian.

    The recipe is excellent. It`s very very similar to what my grandma called `Jungli pulau.` She`d occassionally add pieces of meat or chicken to it too. To clear up the fried rice/pulau debate: What some folk call pulau others call fried rice. I discovered this while in Australia, Canada, Pakistan & India. And yes, Chinese style fried rice does not contain cinnamon, cloves or cardamom. But then, who really cares what a dish is labelled as long as it tastes great, like this one certainly is.

    ur recipe is simply superb.Everyone just loved it. i think SS is really jealous of your recipe and i think people gave it a wrong name for it. u havent mentioned anywhere that its a chinese dish. Anyway Nisha i think u really are a marvelous cook.

    nisha dont worry about the bad comments obout this recipe. we always use indian spices to fried rice. biriyani and fried rice are brother and sister.the only diference is we do not add chicken to fried rice.

    good recipe.. here you are mixing indian and chinese fried rice recipes. better not to have cardomom,cloves,cinnamon, raisons and nuts to have chinese fried rice taste...

    Except the cardamom and cloves, the recipe is good. Fried rice does not contain these two items.
