Kerala Easy Fried Rice

Kerala Easy Fried Rice

Ingredients

Rice - 2 cups
Butter - 6 tbsp
Cinnamon(Karugapatta) - 2 sticks
Onions(large) - 2 nos
Garlic cloves - 4 nos
Celery(chopped)
Pepper - 1 tsp
Soya sauce
Chilly sauce
For garnishing:
Fried onions
Fried cashewnuts
Fried raisins(Onakka munthiri)

DIRECTIONS

Step 1. Heat 4 tbsp of butter in a pan.
Step 2. Add cinnamon and cloves.
Step 3. Add the well cleaned rice and fry it.
Step 4. Add 4 cups of water along with salt and cook it well.
Step 5. Heat 2 tsp of butter in another pan.
Step 6. Add chopped onions and stir it.
Step 7. When it becomes brown, mix the ginger and garlic paste and stir, till it`s aroma emits.
Step 8. Add chopped carrots, beans and cabbage.
Step 9. Add required salt and pepper.
Step 10. :- Vegetables should be half cooked.
Step 11. Add capsicum and celery.
Step 12. Mix cooked rice and stir it well on a low flame.
Step 13. Mix well with soya sauce and chilly sauce.
Step 14. Garnish with fried onions, cashew nuts and raisins.
Step 15. :- Serve hot.
Step 16. :- Boneless cooked and minced meat(100 gm) and two scrambled eggs can make the dish non-vegetarian.

good recipe.. here you are mixing indian and chinese fried rice recipes. better not to have cardomom,cloves,cinnamon, raisons and nuts to have chinese fried rice taste...

The recipe is excellent. It`s very very similar to what my grandma called `Jungli pulau.` She`d occassionally add pieces of meat or chicken to it too. To clear up the fried rice/pulau debate: What some folk call pulau others call fried rice. I discovered this while in Australia, Canada, Pakistan & India. And yes, Chinese style fried rice does not contain cinnamon, cloves or cardamom. But then, who really cares what a dish is labelled as long as it tastes great, like this one certainly is.
