  • 1)Wash the rice and spread it and keep to let the water drain.
  • 2)Pour ghee into a hot kadai.
  • 3)Add ginger-garlic paste and rice and fry it. Keep the fried rice aside.
  • :- The mixture of ginger garlic and Basmati rice smells very good!
  • 4)Add oil to a pan and fry + of the chopped onions and green chillies.
  • 5)Add garam masala and vegetables also and stir fry.
  • 6)Once they are half cooked, add the rice that was kept aside and add 2 cups of water.
  • 7)Close the container and let the rice and vegetables cook together.
  • 8)Heat some ghee in a kadai.
  • 9)Fry the raisins and cashews and keep aside.
  • 10)Fry the rest of the onions to crisp.
  • :- It will become dark brown in colour.
  • 11)After the rice is cooked, pour lemon juice and mix.
  • 12)Transfer to serving bowl and decorate with the fried onions, raisins and cashews and the chopped coriander leaves on top.
  • :- Making Time: 25-30 mins.
  • :- Serve with raitha, papad, and lemon pickle to vegetarians. Add with boiled egg or chicken curry for the non-vegetarians.

    Very good recipe..I served it for a party at home and everyone liked it. But was just wondering if this should be called pulav than fried rice.

    I am going to make this for my guests on this Sunday. This recipe sounds very good. But are you sure that we need to add only 2 cups of water to boil 2 cups of basmati rice and vegetables. Normally I have seen recipes that say to add water atleast double the quantity of rice. Would be helpful if you can clarify this. Thank you...
