Kerala Style Vegetable Kurma

Ingredients

Mixed vegetables - 2 cups
(chopped)
(chopped)
Ginger paste - 1/2 tsp
Garlic paste - 1/2 tsp
(grind with little milk and keep aside)
Coconut milk - 1 1/2 cups

DIRECTIONS

1. Heat 2 - 3 tbsp of oil in a fry pan or kadai.
2. Add chopped onions, green chillies, curry leaves, cloves and cardamom and fry for 2 - 3 minutes on medium flame.
3. Add ginger and garlic paste and fry for 2 minutes on low flame.
4. Mix coriander powder with little water and make a paste. Add it to the frying mixture and fry for 3 minutes on medium flame.
5. Add ground cashewnuts and raisins.
6. Add mixed vegetables and mix well with the masala.
7. Pour two cups of water and salt into it.
8. Cover with a lid and let it cook, approximately 15- 20 minutes.
9. Stir intermittently.
10. Add coconut milk and bring it to boil.
11. Garnish with coriander leaves.
12. :- It`s a medium thick gravy preparation.
13. :- Serve hot with chappathis/rotis.

i tried this recipe . it came out very nice and all my family liked it.i added extra chillies to make it bit more hot. worth trying.
