    to make North Indian Rajma Curry

  • 1)Soak the dried kidney beans overnight (if possible the previous night).
  • 2)Clean the soaked rajma with enough water.
  • 3)Heat up a pressure cooker.
  • 4)Add rajma, salt, cloves, cardamom and sufficient water to cover the kidney beans.
  • 5)Pressure cook upto 4 - 5 whistles or until you feel the smell of cooked kidney beans.
  • 6)Remove from fire and keep aside.
  • 7)Heat oil in a deep pan.
  • 8)Splutter mustard seeds and cumin seeds.
  • 9)Add red chillies and saute for a second.
  • 10)Add curry leaves and onion.
  • 11)Fry, until onions turn golden brown.
  • 12)Add chilly powder and finely chopped tomatoes, until it starts to leave the sides of the pan.
  • 13)Add the kidney beans mixture and boil for 10 mins.
  • 14)Lightly mash a few beans to make the curry thick. 14) Garnish with fresh coriander leaves. ;- Serve with chappathis or rotis.
  • :- You may use canned whole peeled tomatoes instead of fresh to fasten your cooking process.

    This is a lovely recipe by someone who obviously take pride in her culinary excellence. Kudos to the detail and the comments that personlize such input. I actually prefer fresh beans and delight in the aroma that good spice combinations bring out. Well done, m`lady. Hats off to you. Please put in more such recipes for people like me who`ve nearly lost touch with the holy land of Bhaaratha (I hate the word India!! too british for my taste.)

    i dont like rajama. but for my guests i tried this recipe only very recently and came out very well. i added ginger garlic paste along with onions and also milk .And before removing from fire a dash of garam masala powder. the flavour enhanced the taste of the dish. thank you very much for the recipe.

    This turned out to be very good, my husband liked it a lot, thanks for this recipe, also we can reduce the number of tomatoes to 1 and add ginger-garlic paste along with Onion.

    Nice one this.....altho I made slight alterations, added grated ginger and garlic to the onions and during the last few mnts of cooking, also added half a cup of milk. Adding milk really does enhance the flavor and is popular with rajma curries. Try it out folks ! Thnx for this recipe !

    I tried out this recipe with a lot of eagerness but was utterly disapointed.It was so bad and all those tomatoes made it taste like a poor cousin of rasam. Wonder all the praises are written by the author herself..ooof!
