Ingredients for Olan :
Black eyed beans(Van payaru) : 1/2 cup
White gourd(Elavan) : 2 cups
(chopped into thin slices of about 3 cm by 3 cm)
Yellow pumpkin(Mathan) : 2 cups
(chopped into thin slices of about 3 cm by 3 cm)
Green chillies(slit) : 4 nos
Grated coconut : 1/2 cup
Curry leaves : A few
Coconut oil : 1 tsp
Cornflour : 1 tsp
Salt : As reqd
Directions:
1. Preparation Method of Olan :
1)Lightly roast the beans and soak it in water for 8 hrs. Wash & strain well. 2. Extract 1/2 cup of thick milk and 1/2 cup of thin milk from the grated coconut. 3. In a pressure pan, add beans, both vegetables, chillies and second coconut milk. 4. Pressure cook upto 1 whistle. 5. After opening the lid, add salt and thick milk mixed with cornflour. 6. Simmer, stirring till the flour is cooked and all the ingredients are well blended. 7. Add coconut oil and curry leaves. 8. :- If you prefer the beans to be very soft, pressurise it first separately for 2-3 whistles and add.
:- It is safer to add salt at the end to Olan because the volume shrinks after cooking and you can judge better. 9. :- Olan is ready.
