Savala Vada

Savala vada/ulli vada in Thrissur style

Yeast or baking soda - 1/4 tsp
Oil for deep frying


Step 1. Add 1/4 tsp of yeast in quarter glass of luke warm water and mix well. Keep this aside for about 10 mins.
Step 2. After 10 mins, add all purpose flour, chopped green chillies, ginger, curry leaves, 1/2 tsp of oil, onion, salt and yeast and mix it well in a bowl.
Step 3. Add enough water to make a dough.
Step 4. :- It must be bit watery than chappathi mix.
Step 5. Pour 2 tbsp of oil on top of the dough.
Step 6. Tightly close the bowl and keep aside the dough for minimum 2 hours.
Step 7. :- Or u can use 1/4 tsp of baking soda instead of yeast.
Step 8. After 2 hours, again knead well the dough.
Step 9. Now divide the dough into small small balls.
Step 10. Apply oil or water to the palm of your hands and shape dough into the shape of uzhunnu vada.
Step 11. Press each balls between ur palms and make a round shape and make whole in the center using finger.
Step 12. Heat oil in a kadai.
Step 13. Deep fry the vadas in hot oil.
Step 14. When it becomes golden brown and crisp, remove from the oil and drain on a kitchen tissue.
Step 15. :- Serve with chutney or tomato sauce..
