  • 1)Put saffron in a little warm milk and keep aside (if using).
  • 2)Fry the rice in ghee/oil.
  • 3)Cover the rice completely with milk and water.
  • :- For about 1 cup of milk, add 1/2 cup of water.
  • 4)Add all the remaining ingredients.
  • 5)Cover and cook on a low flame for 15 - 20 minutes.
  • 6)When all the water is absorbed, remove from heat.
  • 7)Garnish with cashews and raisins.

    Zarda is a very tasty dish and is famous among the bengalis and punjabis. We do not usually add water. The most important thing is Zarda is to be consumed with a combination of Firni(Which is similar to the paal paysam)by mixing both together. So if you try in this way may be you will like it.Without Firni and Zarda no festival is complete. Thank you.

    Zarda as such is a very good recipe. But the recipe shown here for zarda is not correct and will not yield the authentic taste of zarda.
