Ingredients for Kerala Duck Roast Recipe

Duck(cut into pieces) -1/2 kg
Turmeric powder - 1 tsp
Garlic pods - 25 nos
Ginger - 1 inch piece
Pepper powder- 3 tsp
Green chilies(split) - 6 nos
Small onions(Kunjulli) - 100 gm
Curry leaves - 4 stems
Fennel seeds(Perinjeerakam) - 1/4 tsp
Cumin seeds(Jeerakam) - 1/2 tsp
Cardamom(Elakka) - 3 nos
Cloves(Grambu) - 5 nos
Cinnamon(Karugapatta) - 1" piece
Salt - As reqd
Vinegar/Lemon juice - 2 tbsp
Oil - 1/2 cup

For garnishing:-
Tomato (big and fleshy) - 1 no
Potato - 2 no
Capsicum - 1 no
Coriander leaves(chopped) - 2 tsp





Preparation Method of Kerala Duck Roast Recipe
1)Grind together turmeric powder, garlic pods, ginger, pepper, green chillies, small onions, curry leaves, fennel seeds, cumin seeds, cloves, cinnamon, cardamom and salt into a smooth paste. 2)Take 1/3 portion of the above and mix with vinegar/lemon juice. 3)Marinate the duck with this mixture for 4 - 5 hours. 4)Heat half the oil in a pan. 5)Add the marinated duck pieces and fry for sometime (no need to fry it fully). 6)Heat the remaining oil in a presssure cooker and saute the remaining portion of the masala paste. 7)Add the fried duck pieces to this. 8)Pressure cook for about 30 mins approx. For garnishing:- 9)Cut potatoes into wedges and boil it. 10)Cut capsicum and tomatoes lengthwise and saute this in oil separately (should be crispy). 11)Garnish the duck roast with the above and coriander leaves.

Comments	mina, the above recipie is an excellent one. Please do not spoil the recipie with chicken. This is specially for duck. Chicken roast preparation is diffrent.

Comments	This was my first experiment with duck. The roast was very tasty though it took lot of time to clean and cook ! It thought it is as easy as cooking chicken. I had it with bread,Did not get time to cook anything else :))))

Comments	Hi Mona,this is the traditional preparation and so u need to add the small onion only. The roast will be sweetish if you add big onions. This is an excellent recipie dear manju sudev. you have done a good job. Keep it up.
