Ingredients for Carrot Halwa - Gajjar Ka Halwa Recipe

Carrot - 1 cup(grated)
Sugar - 1/2 Cup
Milk - 2 Cups
Ghee - 2 tbsp
Cardamom powder(Elakka)- A pinch
Raisins(dried grapes) - 7 nos
Cashew nuts(Kashuvandi) - 7 nos
Cashew paste(Cashew nuts ground with water) - 1 tsp.





Preparation Method of Carrot Halwa - Gajjar Ka Halwa Recipe
1)Heat 1/2 tbsp ghee in a pan.Roast the cashew and raisins and keep it aside. 2)To the pan, add another 1/2 tbsp of ghee and add grated carrot and saute for 2 minutes. 3)Add milk and boil(stirring frequently) till a thick paste is obtained. 4)Add sugar and saute till the mixture does not stick to the sides. 5)Add remaining ghee, cardamom powder, raisins , cashew nuts, cashew paste and saute for 1 minute.(too much sauting in ghee will make the mixture rubbery) Note:- This recipe is of medium sweetness. Sweet lovers can add 3/4 - 1 cup of sugar as well!!!
