North indian style potato dish with fenugreek leaves

Step 1

Take methi leaves without stem and wash, drain and keep aside.

Step 2

Peel and dice potatoes.

Step 3

Cook diced potatoes by adding little turmeric powder and salt.

Step 4

When it is cooked, drain it and keep it aside.
:- Make sure that the potatoes are cooked well, but not mashed.

Step 5

Heat oil in a kadai, splutter cumin and fry chopped ginger, garlic and green chillies.

Step 6

Add methi leaves, turmeric powder and chilli powder along with cooked potatoes.

Step 7

Mix it well and keep it in a low flame for about 10 minutes( till the dish is dry).

Step 8

:- Serve hot with roti.

Step 9

:- Make sure that the potatoes are not mashed when the dish is ready.
