Ingredients

  • 1.1 or 2 leftover roast chicken 2 sweet onions
    2.quartered (do not peel) 6 carrots
    3. cut in half (do not peel) 4 celery stalks
    4.cut in half 3 parsnips
    5.cut in half (do not peel) several sprigs fresh thyme (or 2 tablespoons dried) several sprigs fresh dill (or 2 tablespoons dried) 1 garlic head
    6.cut in half (do not peel) 2 tablespoons sea salt 2 teaspoons whole black peppercorns

Directions

Step 1

Remove any excess skin from chicken. Place chicken carcass (leftover meat on bones) and all remaining ingredients into a crock pot and add 6 quarts of water. Bring to a boil, then reduce heat to simmer, cover and cook about 4 hours. Strain everything out of the pot with a colander and discard solids. Chill stock in refrigerator overnight and skim off any fat from surface the next day. The stock freezes well for a few months.
