Step 1

Coat pot with cooking spray, melt butter. Add all mushrooms and saute until juices are released, about 8 mins. Add brandy, if
using cook 30 secs. Add flour and stir and cook 1 minute longer. Slowly add broth and bring to a boil.
Lower heat and simmer 10 minutes. Add salt and freshly groung black pepper to taste. Puree in batches in a blender, return to
pot and heat through.
Can add 1/2 cup heavy cream for additional richeness.
