Traditional recipe for extremely soft appams

telugu: Pachi Biyyam / Biyyamu
hindi: Arwa Chawal
Konkani: Soorev Orovu / Thando
Oriya: Arua Chaula

malayalam: Nalikeram / Thenga
telugu: Kobbari Kaaya
Gujarati: Naliyer / Nariyal
Punjabi: Gola / Nariyal
hindi: Cheeni / Shakkar
Bengali: Laban / Noone
Soak the rice for 4-5 hrs.
Grind together raw rice, cooked rice, coconut water & grated coconut to a smooth batter of dosa consistency.
In the mean time mix the yeast, 2 tbsp sugar in the warm milk & keep aside after 15 mins. The yeast will rise.
Mix the yeast mixture to the batter.
Keep the batter to rise. 6)Before making appams, add salt as desired & sugar (if required) and stir well.
Heat non-stick appachatti.
Pour one big spoon of the batter, rotate the pan and close with lid.
When the steam starts coming out, open the lid and take out the appam.
Instead of cooked rice you can use rice flakes too..

Cud u pl inform
- if we cud take any raw rice or does it hv to be the rice u mentioned in your recipe without altering the outcome.
- Regarding 1 coconut, cud u pl grate a coconut and inform us in terms of cups or better still some weight measurements (U.S. or metric system) We do have freshly grated coconut in packets readily available here.
- If i choose to omit the coconut water, what can be the substitute?
i am aware that originally appam was made using toddy; yes, we don`t have that here in the US. Pl inform. I would love to try out this recipe after receiving your clarifications.
- can i use this recipe for making Goan/Mangalorean Sannas (vattaka appams)?
