Step 1

Dissolve yeast in 1-2 tbsp of milk and keep aside.

Step 2

Mix the appapodi with sugar along with the remaining milk and water in a blender for a minute.

Step 3

Add the yeast mixture to the batter and let it ferment in a stainless steel bowl either in an oven with a pilot or in an electric
yoghurt maker or under a 100 watt light bulb placed a foot above the batter mixture.
:- The amount of time for fermentation is variable.The batter should have tiny holes in from the release of carbon dioxide and it may take 4-8 hours.

Step 4

Heat the non stick appa chatti on slow flame and once well heated rub butter just to glisten the surface.

Step 5

Add sufficient batter before spreading it out.

Step 6

Place the lid and let the appam cook under its own steam.

Step 7

Once the appam is cooked, it is ready to be removed with a non-stick spatula.

Step 8

:- Enjoy the Appam!!!
