hindi: Cheeni / Shakkar
Dissolve yeast in 1-2 tbsp of milk and keep aside.
Mix the appapodi with sugar along with the remaining milk and water in a blender for a minute.
Add the yeast mixture to the batter and let it ferment in a stainless steel bowl either in an oven with a pilot or in an electricyoghurt maker or under a 100 watt light bulb placed a foot above the batter mixture.:- The amount of time for fermentation is variable.The batter should have tiny holes in from the release of carbon dioxide and it may take 4-8 hours.
Heat the non stick appa chatti on slow flame and once well heated rub butter just to glisten the surface.
Add sufficient batter before spreading it out.
Place the lid and let the appam cook under its own steam.
Once the appam is cooked, it is ready to be removed with a non-stick spatula.
