Directions

Step 1

For preparing apricot mousse, puree 6 apricots in a blender.

Step 2

Add lemon juice and sugar. Blend it for further 10 seconds. Put it a bowl and chill it in the fridge.

Step 3

Whip the cream until fluffy.

Step 4

Fold in the cream with the chilled puree and spoon the mousse into small dishes.

Step 5

Cut the remaining apricot into slices and put it on top of the mousse.

Step 6

Apricot mousse is ready. Decorate with mint leaves and serve chilled.
