Directions

Step 1

Clean and cook the vegetables in water along with salt and turmeric powder.

Step 2

Blend coconut,curry leaves and green chilly and add it to the boiled vegetables and cook till required consistency is reached.

Step 3

:-Make sure water is not too much or else the dish will be watery and not thick when done.

Step 4

Once done, switch off the flame and add thick curd (1/4th or 1/2 cup)and mix.

Step 5

:-If sourness is not as required, u may add lemon juice on top but it should be very little.

Step 6

Finally, add coconut oil on top and serve your aviyal hot.

I love this recipe. This is the way my mom taught me to make Avial and for once I was pleased that Avial recipe did not have cumin seeds or Jeera in it. Please try it this way as not many people like Jeera. I have served my Avial in lot of parties and everyone loves it. :-)

See Siva`s comments above in the exact vegetables to use in aviyal. Cumin is very important in making aviyal. The traditional way is adding tamarind pulp.

Small onion is missing from the recepe. Grind some small onion, jeera, Lesson (white onion) with cocunut is must. After preparing add one table spoon cocunut oil for better taste.

this is not the way to prepare the traditional kerala aviyal.potato and pumpkin should be avoided.vegetables normally used in traditional aviyal are as follows. Vellarikka(cucumber) Padavalanga(snakegourd) achinga payar chena(yam) carrot muringakka(drumstick) either curd or mango can be used (in northern kerala people even put paavaykka(bitterguard))

The recipe will taste even better if while grinding coconut add a bit of jeera and ginger and garlic. then after the avial is done add coconut oil on top mix and cover and keep it...it will taste really nice....try and tell me...

I feel one of the key ingredient is missing. Cumin seeds are important while making avial. Usually they are ground along with coconut

Add curd while grinding the coconut in mixie instead of water.Pumpkin is nonot a good choice.Try "Chena"
