Step 1

For preparing avocado soup, cut avocados into half, remove the seeds and scoop out the flesh.

Step 2

Mash the flesh until smooth.

Step 3

Blend avocado paste and 2 cups of chicken stock to a smooth puree.

Step 4

Place the remaining stock in a vessel. Add in pepper and salt to the puree.

Step 5

Heat it gently but do not allow it to boil.

Step 6

Avocado soup is ready. Serve immediately with tortilla squares.
