Directions

Step 1

Cut eggplant into small pieces.

Step 2

Heat oil in a pan.

Step 3

Add all the ingredients for seasoning one by one.

Step 4

Add chopped onions and fry till translucent.

Step 5

Add finely cut eggplant and stir fry on a low heat. Don`t cover the pan.

Step 6

Fry till they are cooked.

Step 7

Add salt, chilly powder and masala powder and fry for a few minutes.

Step 8

Add freshly grated coconut and mix well.

Step 9

:- Serve with plain rice.

Add little ginger while u are frying onion, it gives a nice flavour.Thanks for sharing this recipe

Came out good. However, is there a particular kind of brinjal to use? I used the small, round, purple ones and they were not very soft when cooked. I am not sure if it is supposed to be hard.

the recipe was ok, cannot be graded to excellent level. the confusion comes when the last line reads "add some masala". plz writers mention what sort of masala to be added, is it regular garam masala or some other.
