Directions

Step 1

Slice beinjals into 4 pieces(length-wise).

Step 2

Marinate them for 20 minutes with salt and chilly powder.

Step 3

Fry in vegetable oil.

Step 4

:- This can be done using sliced
potatoes and bitter gourd too.

Mix with Sambar power instead of chilli powder.... It ll b more tasty.....

It was Awesome. The key is Marination. I cooked long but Eggplant with Mushroom and Also Add a bit of Sugar. After puting oil on the pan put long cut garlic, ginger, Mirchi. best, Jaydeep
