For preparing baked fresh cod, peel and chop the shallots.
Fry the shallots and parsley with 10g butter in a saucepan.
Remove the skin and seeds of the tomatoes. Chop them.
Pre heat the oven at 200 degrees celsius.
Add in tomatoes to the shallots.
Pour white wine, salt and pepper. Bring it to boil.
Leave it to simmer for 15 minutes on medium flame. Convert it to an oven dish.
Arrange the fish slices on top of it.
Sprinkle salt and pepper. Bake it for 15 minutes in the oven.
Keep the fish warm and pour the juices into the blender. Add in 50g of butter and blend it.
Baked fresh cod is ready. Serve the blended sauce with the fish.
