Preheat the oven to 160 degrees. Grease a medium sized cake pan.
In a clean bowl, mash bananas with a fork. Add lemon juice and sugar and combine well.
Beat the eggs and add to the mixture. Add baking powder, essence and flour.
Add the melted butter and stir with a spoon till just combined.
Spoon the mixture into the prepared pan and bake for an hour, until risen and golden brown.When cool dust it with icing sugar.Enjoy
