Step 1

Finely chop the beetroot, onion, ginger and green chillies.

Step 2

Heat oil in a pan or a kadai.

Step 3

Splutter mustard seeds.

Step 4

Add beetroot, chillies, onions, ginger and curry leaves one by one and sautT well.

Step 5

Add salt and mix well.

Step 6

Cover and simmer for a few mins.

Step 7

Remove from the flame.

Step 8

Allow it to cool.

Step 9

When cool, add yoghurt and mix well.
