Heat oil in a pan, splutter Mustard seeds followed by Cumin seeds.Add green chillies and curry leaves, sauté it .
Add grated beetroot, sauté it and cooked till it becomes soft.Then add mashed potatoes,salt and mix well. Allows it to cool.
Transfer this cooked vegetables into a bowl . Add curd to it and mix well.Beetroot Salad is ready.Serve with steamed rice.
