  • Pineapple juice - 6 cups
    Lemonade - 4 cups(chilled)
    Blue curacao - 3 cups
    Dry gin - 3 cups
    Pineapple wedges - As reqd to garnish(fresh)


Step 1

For preparing blue lagoon, place the pineapple juice in a shallow metal container. Cover with foil and place in the freezer for 4 hours.

Step 2

Roughly break up the frozen pineapple juice with a metal spoon and quickly transfer it into a food processor. Process until smooth.

Step 3

Transfer to a large jug.

Step 4

Add in the lemonade and stir until it combines.

Step 5

Pour the blue curacao and gin among the glasses. Pour over the pineapple mixture.

Step 6

Blue lagoon is ready. Garnish with a pineapple wedge and serve immediately.
