Brinjal Chutney

Brinjal Chutney also called as Vankaya Chutney is a famous dish in the state of Andhra. This spicy and little tangy chutney is prepared with the big Baingan or also with the violet medium ones. To make this brinjal chutney, the brinjals are cooked in oil till it is tender along with onions and tomatoes.They all together grounded and seasoned. It is hot, tangy and delicious when it served along with the ghee.

Ingredients

  • Brinjal 1/2 kg
    onion 1 no.
    tamarind small piece
    red chili 5 no.
    urad dal 1 tbsp
    Coriander seed 1 tbsp
    Salt to taste
    oil 2 tbsp
    mustard 1/4 tsp
    curry leaves 1 sprinkle

Heat the 1 tsp oil in the pan and roast the urad dal, coriander seed and red chili

heat the oil in the pan and cook the brinjal by adding salt

again heat the oil in the pan and saute the onion until it get golden brown and allow to cool

now grind and make a powder with red chili, coriadner seed and urad dal

grind it to the fine paste by adding little water

heat the oil in the pan and temper the mustard and curry leaves. now brinjal chutney is ready.
