Step 1

Cut brinjal to thin round pieces each about 1 cm thick.

Step 2

Marinate the above with turmeric powder, chilly powder and salt. Keep aside for 10 minutes.

Step 3

Heat some oil in a pan.

Step 4

Fry the marinated brinjal pieces till brown. Drain and keep aside.

Step 5

Heat 1 tbsp oil in a pan.

Step 6

Splutter mustard seeds.

Step 7

Add curry leaves and red chillies.

Step 8

Add onions sliced lengthwise and saute well till light brown.

Step 9

Add the fried brinjal pieces now.

Step 10

Add garam masala, pepper powder and salt(only if needed).

Step 11

Saute well.

Step 12

Grind together grated coconut, cumin seeds and garlic pods to a paste and add this to the above.

Step 13

Mix well.

Step 14

:- Tastes great with rice and rotis


Thanks Pooja for this nice recipe. Usually I don t like the taste of brinjal. But my husband likes it. So I was searching for a different recipe with it. Tried this one and came out really nice. We both liked it. One note.. I didn t grind the coconut to a paste.. instead just mixed them in the mixer.. Thanks again..
