Step 1

Heat 2 - 3 tsp of oil in a pan.

Step 2

Splutter mustard seeds followed by cumin seeds.

Step 3

Add the finely chopped onions, slit green chillies, crushed garlic and curry leaves.

Step 4

When the onions turn transparent, add the diced tomatoes.

Step 5

When the tomatoes turn pulpy add the chilly powder, coriander powder, tumeric powder and salt to taste.

Step 6

Add the drumsticks and pour water to cover everything.

Step 7

Cover and allow it to cook.

Step 8

When the drumsticks are almost done, add the brinjal pieces.

Step 9

Cover and allow it to cook.

Step 10

Check for salt and spice.

Step 11

Once all the water evaporates and the veg are nicely fried, remove from fire.

Step 12

:- Variations: You can make this recipe with just drumsticks or just brinjal too.

Step 13

:- Good side dish for sambar rice, rasam rice, curd rice, and if you are anything like me, you would enjoy it with just hot plain rice.
