Step 1

For preparing capsicum-potato omelet, in a bowl, beat in eggs, onion, green chillies, salt and pepper powder.

Step 2

Toss in the sliced capsicum and mix gently.

Step 3

Keep it aside for 1/2 an hour to allow the flavors to infuse in properly.

Step 4

Meanwhile marinate the sliced potato in salt for 5 minutes and deep fry it in oil till done. Remove and keep it aside.

Step 5

Heat a frying pan and pour half of the egg mixture. Place the fried potato on one side of the omelet.

Step 6

Drizzle a little oil around the sides of the omelet and fry it on both the sides on low flame till done.

Step 7

Repeat the procedure with the remaining egg and fried potato.

Step 8

Capsicum-potato omelet is ready. Serve hot with bread.
