Step 1

For preparing cashew pork curry, blend together onions, ginger, cumin seeds and garlic to a fine paste.

Step 2

Soak the cashew nuts in water for 30 minutes and blend into fine paste. Keep it aside.

Step 3

Heat oil in a pressure cooker. Splutter mustard seeds.

Step 4

Add onions paste and saute till it is browned.

Step 5

Then add chilly powder, turmeric powder, salt and chopped tomatoes.

Step 6

Toss in the pork with required water and allow it to cook in a pressure cooker.

Step 7

When the pork is cooked, add in lemon juice and mix well.

Step 8

Pour in the cashew paste and allow it to simmer for 2 minutes on low flame.

Step 9

Remove it from the flame and garnish with coriander leaves.

Step 10

Cashew pork curry is ready. Serve hot with chapati.
