Cut the cauliflower/gobi into medium florets and cube the potatoes.
Keep the green leaf part of the stem of the cauliflower/gobi as well.
Heat oil in a pan/kadai and add the whole cumin seeds / jeera.
When the jeera turns brown add the chopped onions and slit green chilies and sauté for 3-4 minutes. Add the chopped ginger and mix well.
Add the chopped tomatoes and all the dry masala powders and salt and cover the pan and cook till the oil separates from the masala.
Add the cut aloo and gobi and ½ cup water and cook covered for 15-20 minutes till done.
Garnish with coriander and serve hot.
