For preparing chicken curry with mushrooms, pour half of the coconut milk into a wok vessel over a medium flame. Bring the coconut milk to the boil, stirring constantly until it has separated.
Add the red curry paste and cook the mixture for 3 minutes. Stir the paste all the time to prevent it sticking on the bottom of the pan.
Add the chicken pieces, fish sauce and sugar to the pan. Stir well and allow it to cook on low flame.
Continue to stir to prevent the mixture from sticking to the base of the pan.
Then add the coconut milk, mushrooms and lime leaves. Allow it to boil over medium flame, stirring it constantly to prevent the mixture from sticking.(add salt if required)
Chicken curry with mushrooms is ready. Serve hot with rice.
