Step 1

For preparing coconut bean curd curry, pour 1 1/2 cups of the coconut milk in a vessel. Cook until an oily sheen appears on top.

Step 2

Add the red curry paste, fish sauce and palm sugar to the coconut milk. Mix well.

Step 3

Toss in the mushrooms. Mix well and cook over a medium heat for about 1 minute.

Step 4

Pour in the remaining coconut milk and allow it to boil.

Step 5

Add the French beans and cubes of bean curd and allow to simmer gently for another 4-5 minutes.

Step 6

Stir in the lime leaves and red chillies.

Step 7

Garnish with coriander leaves.

Step 8

Coconut bean curd curry is ready.
