Step 1

For preparing coconut-onion rice, soak urad dal in water for 10 minutes and strain extra water.

Step 2

Chop onion, green chillies and coriander leaves.

Step 3

In a kadai, heat coconut oil and fey red chillies, cumin seeds and mustard.

Step 4

When mustard splutters. Add urad dal and sautT for 5-8 minutes.

Step 5

Now add green chillies, onion and curry leaves and sautT.

Step 6

Add grated coconut and sautT for 10 minutes adding salt.

Step 7

Remove from fire, transfer cooked rice to this and mix well.

Step 8

Finally sprinkle chopped coriander leaves over the rice.

Step 9

Coconut-onion rice is ready, Serve with pudina chutney.
