Step 1

For preparing coconut pears pudding, preheat the oven to 180 degrees celcius.

Step 2

In a baking bowl, mix pears with required sugar, lime juice and 1 tbsp butter. Keep it aside.

Step 3

Sift maida, salt and baking powder together. Keep it aside in a bowl.

Step 4

To the bowl add in desiccated coconut powder, cashews and raisins. Mix it well.

Step 5

In another bowl beat the egg white till stiff peaks form. Keep it aside.

Step 6

In a big bowl, beat butter and required sugar until it becomes fluffy.

Step 7

Add in the egg yolks and vanilla essence. Mix well.

Step 8

Slowly fold in the maida mixture with milk. Mix it well till there are no lumps.

Step 9

Then fold in the beaten eggs gently.

Step 10

Spread this mixture evenly over the pears mixture and bake until it is firm.

Step 11

Coconut pears pudding is ready.
