Step 1

For preparing corn flour idly, heat oil in a pan.

Step 2

Add in mustard seeds allow it to splutter. Then add in cashew nuts and roasted split bengal gram. Fry for 1 minute.

Step 3

Then add in green chillies and corn flour. Fry for 5 minutes on low flame.

Step 4

Remove from the flame and allow it to cool.

Step 5

Mix curd and salt in a bowl.

Step 6

Add the curd and a little water in the corn flour mixture. Mix well to make a smooth batter avoiding lumps. Keep it in a warm place for 5 hours to ferment.

Step 7

Mix soda-bi-carbonate and coriander leaves in the batter.

Step 8

Scoop the batter using a ladle and pour it into idly moulds.

Step 9

Steam it for 10 minutes.

Step 10

Corn flour idly`s are ready. Serve hot with any chutney.
