Step 1

For preparing delicate and instant achar out of neem flowers, wash and cut mangoes into small pieces.

Step 2

Take a small pan and fry the neem flowers in 1/2 tsp oil. Keep it aside.

Step 3

Take another pan heat the remaining oil and splutter mustard seeds.

Step 4

Add the neem flowers and asafoetida to this and stir.

Step 5

Add mangoes at this point. Stir for a few minutes.

Step 6

Add little water and cover it. Allow it to cook till the mangoes become soft.

Step 7

Once cooked, add jaggery, chilly powder, tamarind juice and salt.

Step 8

Lastly, add curry leaves and mix everything well.

Step 9

Delicate and instant achar out of neem flowers is ready.
