For preparing delicious pistachio custard, soak the agar-agar in 3/4 cup of cold water for 3-5 min and cook it on low flame till it dissolves.
Take the custard powder and add a little milk to make a thick paste avoiding lumps. Keep it aside.
Boil the milk, vanilla essence and sugar. Add the custard paste slowly to it and continue cooking until you get a smooth sauce.
Add the dissolved agar-agar to the custard and boil again for 2 minutes.
Filter the mixture and let it cool slightly.
Add half the pistachios to this custard mixture and mix well.
Pour this mixture to the serving cups and freeze it till firm.
Heat sugar in a pan with 1 tbsp of water on medium flame. Allow the sugar to melt till it becomes light brown in colour and caramelized.
Pour the caramel over the set custard and garnish with almonds on top.
Delicious pistachio custard is ready. Serve immediately.
