Step 1

For preparing duck egg dry fry, grind together garlic, dry red chillies, shallots, pepper and a little water to a fine paste.

Step 2

Heat oil in a vessel and splutter mustard seeds. Drop in the curry leaves.

Step 3

Add the ground paste and chilly powder. Saute well.

Step 4

Then add in the boiled potatoes and pour 1/2 cup of water and required salt. Allow it to cook with the lid on.

Step 5

Cut each of the egg`s in four halves.

Step 6

Once the water dries up a bit, add in the eggs. Cook for 1 minute and remove it from the flame.

Step 7

Garnish with coriander leaves.

Step 8

Duck egg dry fry is ready. Serve hot with chapatti, bread, etc.
