Step 1

For preparing duck roast, cut the duck into about 8 big pieces.

Step 2

In a vessel add in duck, coriander powder, pepper powder, turmeric powder, chilly powder, cloves, cinnamon, onions and salt with required water. Allow the duck to cook.

Step 3

Strain it and keep the stock aside(do not throw away the stock).

Step 4

Heat oil in a pan and fry the duck till brown in colour.

Step 5

Remove the pieces and keep it aside.

Step 6

Pour in the remaining stock into the pan and allow it to simmer for 2 minutes.

Step 7

Toss in the fried duck and boil it till the stock dries.

Step 8

Garnish with coriander leaves and lime juice. Mix well and remove it from the flame

Step 9

Duck roast is ready. Serve hot as a starter.
