Step 1

For preparing easy baingan bartha, first apply a few drops of oil on the brinjal and bake in a preheated microwave oven for 30 minutes.

Step 2

Allow the brinjals to cool completely and slowly remove the outer skin. Mash the interior flesh thoroughly and keep aside.

Step 3

Heat oil in a frying pan and saute onion, green chilly, garlic and ginger for a few minutes until the onion turns golden in color.

Step 4

Add chopped tomatoes and cook until mashed.

Step 5

Add red chilly powder, coriander powder, turmeric powder, cumin powder and garam masala.

Step 6

Stir in mashed brinjal, fresh cream and required salt.

Step 7

Mix well and cook covered for 10 minutes until the gravy has acquired a thick consistency.

Step 8

Easy baingan bartha is ready. Serve hot and enjoy with rotis, naan or chappathis..
