Step 1

Cook the rice with 2 cups of water, pinch of salt and 1 tsp of oil till done.

Step 2

:- Rice done when can pressed by hand and mashed.

Step 3

Heat 1/4 cup of oil in pan.

Step 4

Mix eggs and beat them with a pinch of salt and ground pepper.

Step 5

Add the eggs to the pan and scramble it lightly.

Step 6

Remove the eggs from the pan and add the rest of the oil to the pan.

Step 7

When oil gets hot, add ginger and chillies into the pan.

Step 8

Stir it in pan for 1 - 2 mins.

Step 9

Add green beans, carrots n capsicum and stir for another minute.

Step 10

Sprinkle a little water into the pan and cover for 1 minute.

Step 11

Add green onions to the pan and stir for 2 mins.

Step 12

Add salt and half of the pepper powder and mix well.

Step 13

Add the cooked rice to the pan and stir for another 1 min.

Step 14

Add rest of the pepper powder and some salt if needed to the rice and mix well for 2 more mins.

Step 15

Add soy sauce to the rice and mix well for 2 more mins.

Step 16

Add the scrambled eggs to the rice and take the pan off the heat.

Step 17

Mix the eggs well in the rice till evenly distributed around the rice.

Step 18

:- Serve hot with Chili garlic sauce or Chicken/Veg machurian.

Step 19

:- Always keep the heat under the pan between medium and high while cooking the rice. Also woks work best for cooking if not use a big size pot so mixing is easy.

The recipe was reall good and easy. One suggestion chopped spring onions canbe added to bring out the chinese flavour...... Keep posting Good and Easy receipe

hie!!!this is exactly the same recipe as of mine...the only diff is that i use garlic too with peas n cabbage too!i can never hv enough of fried rice whenevr i make it!cheers!!!

very nice recipe..usually i prefer veg.fried rice to egg fried rice..But my husband likes egg.fried rice...so i tried this one..but to be frank, i had the dish much more than him...really gud one and i m confident to prepare this dish for the guests..Thank u for the recipe
