Step 1

Boil eggs, shell, make slashes all around and keep aside.

Step 2

Grind grated coconut and shah jeera till smooth, and keep aside.

Step 3

Chop onions, tomatoes, ginger and garlic and slit green chillies.

Step 4

Heat oil in a pan. Fry the onions till transparent.

Step 5

Then, add chillies, ginger and garlic and fry till they turn brown.

Step 6

Then, add the tomatoes and fry till pulpy.

Step 7

Add turmeric, coriander, jeera and chilli powders and sautT for a while.

Step 8

Then add the ground ingredients and fry till the raw smell goes.

Step 9

Add 2 cups of water and salt, and bring to a boil.

Step 10

Slip in the boiled eggs and simmer till gravy is thick.

Step 11

Sprinkle garam masala and mix gently, till flavours are well blended.

Step 12

Remove egg korma from fire. Season egg korma with curry leaves and mustard seeds.

Step 13

Garnish egg korma with chopped coriander leaves.

Step 14

:-Serve egg korma hot with rice or chappathis.

I like egg like this only. But while making it my apron caught fire so be careful while making this. Also dont add curds to this recipe.egg and curds dont go well togather.

Hai Rhea When you try the same recipe with coconut milk instead of coconut gratings you get Egg Stew ,that`s tottaly a different dish.

This recipe is excellent. I used 1/2cup coconut milk in place of grated coconut and it turned out really well. Try it with puri its an excellent combination.Enjoy!
