Step 1

Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.

Step 2

Heat oil in a pan.

Step 3

Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.

Step 4

Sprinkle salt and sugar.

Step 5

Add grated coconut and chopped onion.

Step 6

Mix well.
