Step 1

Cut the eggplant into 2 piece horizontally and then cut each piece into 6 - 8 pieces vertically.

Step 2

Marinate the eggplant with 1 tsp of chilli powder, turmeric powder and salt for 30 mins.

Step 3

Deep fry the marinated eggplant pieces.

Step 4

Grind together small onions, ginger and green chillies.

Step 5

Heat oil in a frying pan or a kadai.

Step 6

Splutter mustard seeds.

Step 7

Add the finely chopped onion and saute, until thy turn golden brown.

Step 8

Add the ground paste into it and saute, till the oil separates.

Step 9

Add the finely chopped tomato into it and saute when it becomes mashed.

Step 10

Add 1 1/2 cups of water and some salt.

Step 11

Allow it to boil.

Step 12

Add the fried eggplant and 1 tsp of chilli powder and the garam masala.

Step 13

Cover and cook for 5 mins.

Step 14

Garnish with coriander leaves.

Step 15

:- Serve with chappathis, pooris, naan and porotta.

The recipe is nice. We enjoyed it. Thanks for sharing. There is no mention of when to put cumin seeds. I just put the cumin powder with garam masala. The final product came out good. Thanks again.
