Step 1

Heat oil in a pan.

Step 2

Add cloves and cinnamon and stir.

Step 3

Add ginger and garlic and fry well.

Step 4

Add onion and saute until brown.

Step 5

Lower the flame and add chilly powder, coriander powder, turmeric powder, sambar powder and salt.

Step 6

Mix well with onion, garlic and ginger.

Step 7

Add brinjals, tamarind extract and water.

Step 8

Mix all ingredients well.

Step 9

Cover and cook, till the brinjals are done.

Step 10

When brinjals are cooked well, add cashew and coconut paste and mix well.

Step 11

Set it to cook for about 5 mins, stirring occasionally.

Step 12

Season with mustard seeds, curry leaves and dry chillies.

Step 13

Garnish with coriander leaves.

Step 14

:- After adding the cashew and coconut paste, if you feel that you need the dish more spicy, just dash 1 tsp of pepper powder - but allow it to get cooked well after that else the raw pepper smell/taste can spoil the dish.

Good one..I just sauted the brinjals in oil before cooking in gravy..

The important thing about ennai kathirikai kolambu is to fry the brinjal well (Until the outer part becomes a little soft) in the oil...Try adding tamarind and water after frying it...it will be more tasty!!

Hi Karthica..this is a very good recipe. I never knew anyone could make ennakathirikai like my mom did, but now am sure you do. I tried it out and it came out very well. My husband and friends liked it a lot.
